The past two weeks have been fraught with activity including birthdays, a school fair, dog sitting, a deadline or two, sick kiddies (and a sick me!) as well as the usual busy routine. As a result it has taken me a little longer than usual to get this post up. I made this roast chicken a few weeks ago and I know I have found a new favourite in this recipe. Spicy BBQ Chicken Quesadillas
The other day I was chatting with a group of school moms about cooking, specifically family dinners, and a couple of us (myself included) were saying how we keep soft tortillas in the cupboard for quick, fuss-free suppers when time is limited. The kids love them and they can used to make wraps, fold overs and even pizza. The other meal you can make with them of course is quesadillas!

Creamy Chicken with Lemon and Rosemary
After what felt like a particularly cold winter we are in full spring mode, hooray! The worst should be behind us now and I have a suitably zesty and lemony fresh recipe to get you into a sunshiny mood. If you are lucky you may even have a lemon tree in your garden with fresh lemons that you can use to make this amazingly creamy sauce. We have one which was given to us by some good friends several years ago, soon after we moved into our then new home. Fortunately it has not succumbed to drought, pests or a lack of conversation but it has not exactly flourished either. In fact, nearly six years after we planted it, I think it is roughly the same height as it was when we got it, give or take a few extra leaves on either side. So until our stunted tree can get its act together it is store-bought lemons for us!

Ginger, Mushroom and Chicken Stir Fry
This week I am diving deep into my recipe collection. All the way back to the 90's in fact - they seem like forever ago! Today's dish is adapted from a stir fry recipe I made in my high school Home Economics class, nearly 20 years ago. I even have the original (rather yellowed) handout from that class, on it a handwritten recipe that was copied on the old "rolio machine", which then made its way from a school ring binder all the way to my current recipe book shelf.

Chicken & Sausage Cassoulet: The I Made It Challenge
This month I decided to participate in my first "I Made It" challenge which happens monthly over at Lavender and Lime. I think it's a fantastic idea, getting us foodies into the kitchen and challenging ourselves with dishes we may never have attempted or mastered before. No prizes, the main goal is to have fun! Each month a new dish is chosen, and September's challenge was hosted by my friend Joanne over at The Food Crew.
When I heard that Jo had chosen cassoulet as the dish of the month I was very keen to participate. Partly because I love French food and partly because I was still in challenge mode earlier in the month!

Dinner in a flash! - Chicken Tikka with Fragrant Rice
When it comes to cooking and baking I'm definitely more of a "make it from scratch" type of cook. There are a few exceptions to this rule though. Prime example - puff pastry. I use the frozen variety often and haven't made it from scratch in about 10 years. I seem to recall it taking hours and hours and I rarely have spare time for that. The shop bought variety is just fine! The other exception is curry pastes. There are some fantastic brands on the market that allow me to whip up delicious and satisfying curries in no time at all.

Tapas À La Miro
Just over a week ago I received the details of the 8th challenge in the Freshly Blogged competition, which I have been participating in since June. Each week the contestants are given a list of ingredients and a few days to create, cook and photograph a dish using these ingredients. The public have a chance to view the recipes online and vote for their favourites, and each week a panel of judges send a few of the contestants to the chopping block, as it were.
Week 8's challenge entitled "Eat Your Art Out" had me scratching my head for a while. The ingredients we were given were superb and well suited - a whole chicken, chorizo sausage, potatoes, onion, garlic, lemon and sherry. We were told, however, that the recipe and styling had to be inspired by art - an interesting twist!

Dinner Party Feast!
The Freshly Blogged competition is in week 6 already, wow! This week's challenge was sponsored by Robertsons Spices and it was a double whammy with a brief that said that we had to create two dishes, both containing cayene pepper and cinnamon. The other ingredients we had to use were chicken livers, cream and white chocolate, and we could also include any 3 fresh ingredients and 2 grocery items.
I was feeling inspired when I got the challenge and had my dishes planned out within an hour - that is definitely a record for me! Spices are a big part of my every day cooking, and I love experimenting and finding unexpected ways of including them in my dishes. These creations are no exception! First up were the chicken livers. I wanted to use these in a less conventional way and the idea of ravioli appealed to me immediately. I included fresh sage in the pasta and created a sage, white wine and cream sauce to be drizzled on top. This dish has a wonderful rich flavour and is great fun to make. You can get the whole family involved in the pasta making process which is always easier with a few extra pairs of hands!
Next up was the white chocolate, and I decided to be adventurous and make a double chocolate meringue cake. It has a bottom layer of moist, dark chocolate cake with a hint of chilli, while the meringue topping is flavoured with warm cinnamon and sweet dashes of white chocolate. This is a sublime combination of flavours and textures and will look very impressive on your dinner party table.

CHICKEN LIVER RAVIOLI IN A SAGE CREAM SAUCE
&
DOUBLE CHOCOLATE MERINGUE CAKE
Serves 4
For the pasta:
270g plain flour
pinch of salt
2 tablespoons finely chopped sage
2 large eggs
2 teaspoons olive oil
3 egg yolks
For the ravioli filling:
2 teaspoons flour
pinch of salt
1/4 teaspoon cayene pepper
250g fresh chicken livers
1 tablespoon sunflower oil
1/4 teaspoon ground cinnamon
1/2 onion, finely chopped
2 garlic cloves, thinly sliced
3 tablespoons balsamic vinegar
For the sauce:
3 tablespoons butter
1 medium onion, chopped
2 tablespoons chopped sage
1 cup white wine
1 cup cream
salt
pepper
olive oil
12 sage leaves to garnish
For the chocolate meringue cake:
2 1/4 cups flour
3 teaspoons baking powder
1.5 cups white sugar
1 teaspoon bicarb
5 tablespoons cocoa + extra for dusting
pinch of salt
1/8 teaspoon cayene pepper
1.5 cups hot water
3/4 cup sunflower oil
1 tablespoon white vinegar
160g castor sugar
1 teaspoon ground cinnamon
4 egg whites
80g white chocolate, finely chopped
To prepare the pasta:
Step 1.) Combine the flour, salt and sage in a bowl. Add the eggs, olive oil and egg yolks and mix until mostly combined.
Step 2.) Tip everything onto your work surface and knead for 10 minutes until you have a smooth dough. Dust the dough with pasta if it becomes sticky.
Step 3.) Cover the dough and rest in the fridge for 30 minutes while you make the filling.
To prepare the filling:
Step 1.) Combine the flour, salt and cayene pepper in a bowl. Add the chicken livers and toss to coat.
Step 2.) Heat the sunflower oil in a frying pan. Add the cinnamon, onion and garlic and sauté for 2 minutes. Remove from the pan and set aside.
Step 3.) Using the same pan, cook the chicken livers for 5-6 minutes until well browned and cooked through.
Step 4.) Add the onion mixture back into the pan. Add the balsamic vinegar and cook for a further minute. Remove from the heat. Use a food processor to blend into a smooth filling.
To prepare the ravioli:
Step 1.) Divide the pasta dough into 2 pieces for easier rolling. Use a pasta machine to roll the dough into a long, thin sheet - starting on the largest setting and working your way up.
Step 2.) Place a strip of pasta (mine was roughly 14cm wide) in front of you. Roll small teaspoonfuls of chicken filling into balls and place them along the sheet of pasta, approximately 4cm apart and 4cm away from the edge.
Step 3.) Brush the pasta sheet with water, along the edges and inbetween the balls of filling. Carefully fold the pasta edge that's closest to you over to enclose the filling and gently press out any air bubbles. Fold the pasta over again. Use a knife to the cut the pieces of ravioli apart.
Step 4.) Cook the ravioli in a pot of boiling salted water for 6-8 minutes until tender but still firm.
Any excess pasta can be rolled and cut into strips or lasagne sheets.
To prepare the sauce:
Step 1.) Melt the butter in a saucepan. Add the onion and sauté for 2 minutes. Add the sage and sauté for a further minute.
Step 2.) Add the white wine and cream. Bring to the boil, then reduce heat and allow to simmer for approximately 10 minutes until the sauce has reduced by half.

Step 3.) Pop the sauce in a food processor and blend until almost smooth. Season to taste with salt and pepper.
Step 4.) Heat a dash of olive oil in a frying pan. Fry the sage leaves for a few seconds on each side until crisp. Remove from the pan and set aside on a piece of kitchen towel.
Step 5.) Dish the ravioli onto heated plates. Drizzle with the sauce and top with fried sage leaves.
To prepare the meringue cake:
Step 2.) Sift the flour, baking powder, white sugar, bicarb, cocoa, salt and cayene pepper into a bowl and mix.
Step 3.) Add the hot water, sunflower oil and vinegar and mix until you have a smooth batter.
Step 4.) Pour the batter into the cake tin and bake for 35 minutes.
Step 5.) While the cake is baking you can make the meringue. Mix the castor sugar and cinnamon in a bowl. Whisk the egg whites to soft peak stage. Continue whisking while you gradually add the cinnamon sugar. Continue whisking until you have a thick, glossy mixture.
Step 6.) Fold the white chocolate into the meringue. Carefully pile the meringue onto the hot cake and spread over the top. Return the cake to the oven for 30 minutes, or until a skewer inserted into the middle comes out clean.
Step 7.) Allow the cake to cool completely before removing from the tin. Dust with cocoa powder and serve.

Dinner in a flash! - Honey, Soy & Lime Chicken with Noodles
It has been a few weeks since the last "dinner in a flash" posting, and I hope you'll agree that this one is a goody!
This last week has been a whirlwind of appointments, errands and social get-togethers, nothing out of the ordinary now that I think about it! Most of you can relate to that feeling of being run off your feet I'm sure, so ... flag this recipe because it's perfect for those evenings when, after a crazy day, you want to enjoy a good home cooked meal with minimal effort.
And by minimal I mean you could have this on the table in less than 20 minutes - win!
If you love Asian flavours then I'm sure you'll enjoy this dish. Feel free to change up the veggies if you wish, you could use carrots, cabbage or shitake mushrooms to name a few. I chose mange tout and baby corn as they require very little in the way of preparation and cook in no time at all, it's all about speed today!
Mmm, I can smell the honey caramelising already. Enjoy!

HONEY, SOY & LIME CHICKEN
WITH NOODLES
Serves 2
1 tablespoon honey
60ml (1/4 cup) soya sauce
1 tablespoon lime juice
1 teaspoon crushed ginger
1 1/2 teaspoons crushed garlic
2 chicken fillets
150g dried noodles
60g mange tout
60g baby corn
sunflower oil for frying
salt and pepper
sesame seeds to garnish
Step 1.) Combine the honey, soya sauce, lime juice, ginger and garlic in a bowl and mix well to make a dressing.
Step 2.) Cut the chicken fillets into 5cm strips. Measure 3 tablespoons of the dressing into a small bowl and set aside, then toss the chicken strips in the remaining dressing to coat and leave to stand.
Step 3.) Bring a pot of water to the boil on the stove, then add the noodles and cook as per the packet instructions. (They should be cooked but still firm, not soft!)
Step 4.) Rinse the mange tout and baby corn in cold water. Top and tail the mange tout and cut the baby corn in half lengthways (you can also trim the thick ends if necessary).
Step 5.) Heat a dash of sunflower oil in a frying pan or wok. Add the chicken and its marinade and cook for a few minutes just to brown the chicken. Add the baby corn and cook for 1 minute. Then add the mange tout and cook for a further 2-3 minutes until the chicken is cooked through.
Step 6.) Drain the noodles. Add the chicken, vegetables and the remaining dressing that you set aside earlier and toss well. Season to taste with salt and pepper.
Step 7.) Dish up onto warmed plates and sprinkle with a few pinches of sesame seeds to serve.

Dinner in a flash! - Lemon & Herb Chicken
With a busy Easter weekend drawing to a close I trust you all had a wonderful time. I heard from a couple of you who decided to roll up your sleeves and get stuck into my hot cross bun recipe, I hope you enjoyed it! After an indulgent weekend I thought I would post a lighter, healthier recipe for you all this week.
There are a number of things I love about this recipe... it's bursting with fresh flavours, leaves me feeling satisfied but not overfull and I need go no further than my back garden to gather some of the ingredients. And of course, it can be prepared in no time at all. So as you head into the new week why not give this dish a try!

Serves 2
LEMON & HERB CHICKEN
with a warm chickpea & roasted tomato salad
Serves 2
Juice of 1 lemon (3-4 tablespoons)
1 teaspoon chopped parsley
4 sprigs of thyme
1 large garlic clove, crushed
2 tablespoons olive oil + extra for drizzling
salt and pepper
2 chicken breast fillets, sliced horizontally
100g cherry tomatoes
400g tin chickpeas
40g rocket
Step 1.) Preheat your oven to 200°C.
Step 2.) Make a marinade by combining the lemon juice, parsley, the leaves from the thyme sprigs, garlic and olive oil. Season with salt and pepper. Coat the chicken pieces in 3 tablespoons of the marinade and leave to stand.
Step 3.) Halve the cherry tomatoes lengthways and place in a small roasting pan. Drizzle with a little olive oil, season and roast in the oven for 15 minutes or until softened.
Step 4.) While the tomatoes are roasting, drain the chickpeas and toss them in the remaining marinade. Cook over a medium heat for a few minutes, until they are heated through, then set aside in a warm place.
Step 5.) Next, griddle the chicken fillets for 3-4 minutes on each side or until they are golden and cooked through. If the pieces are very thin they'll probably only need 2-3 minutes per side.
Step 6.) Arrange the washed rocket leaves on your plates. Pile on the warm chickpeas and roasted tomatoes along with the chicken and dinner is done!

Dinner in a flash! - Chutney Chicken
I am always on the look out for new supper recipes that can be rustled up almost in no time at all (anything under 30 minutes is ideal!). This is one of my favourites adapted from a recipe I picked up out of Olive Magazine UK a few years ago. The distinct, warm flavour of cumin combined with tangy spring onions is utterly delicious. I prefer using peach or mango chutney in this recipe but any variety will do. If you're not a fan of fresh coriander feel free to leave it out, and if you like a little bit of heat I recommend adding a pinch of chilli flakes to your spice mix.

CHUTNEY CHICKEN
Serves 4
2 tsp light brown sugar
2 tsp ground cumin
1 tsp salt
1/2 tsp ground coriander
black pepper
4 chicken breast fillets cut into 5cm strips
olive oil
300g couscous
800ml good quality chicken stock
120ml chutney
4 spring onions, sliced into 4cm strips
small handful of coriander leaves, chopped
Step 1.) Combine the brown sugar, cumin, salt and ground coriander in a small bowl. Grind in some black pepper and stir well. Rub this mixture into the chicken strips and set aside.
Step 2.) Heat a dash of olive oil in a frying pan and add the chicken strips. Cook them for a few minutes, just until they're brown on the outside. You don't need to cook them through at this stage.
Step 3.) Place the couscous in a bowl and pour over 600ml of your hot chicken stock. Cover and leave to stand.
Step 4.) Add the chutney to the chicken pan and allow to bubble for a few minutes, then add the sliced spring onion and cook for a further minute.
Step 5.) Pour the remaining 200ml chicken stock into the pan and leave to bubble until the sauce has thickened slightly and the chicken is cooked through.
Step 6.) While the sauce is boiling add the chopped coriander leaves to the couscous and fluff up with a fork. Spoon onto heated plates and top with chicken and sauce. You can garnish this dish with a few fresh coriander leaves if you like.
