It has been a while since I worked on a muffin recipe and I am rather pleased with this particular one. I was recently invited onto the Expresso Morning Show to present three different, easy recipes with one common ingredient. I chose dates as my star ingredient and wanted to include a baking recipe in one of the cooking segments. That was the inspiration behind these date muffins.

Easy Beetroot Crisps
I have been making an effort to buy more organic vegetables lately. Besides being good for the family I like the idea of supporting smaller, local farmers... and their produce is fantastic! To make life easier I order a weekly veggie bag which I collect from a nearby organic shop every Wednesday and the kids love unpacking it to see what goodies we have for the week ahead.

Chocolate, Honey and Hazelnut Fridge Fudge
I was not quite sure what to call this recipe. It is not really like fudge in the traditional, crystalline sense but something in between fudge and chocolate. The reason for this is that I have sweetened it with honey instead of sugar, giving it a silky smooth, melt in your mouth texture - delicious!

Minute Steak with Sun Dried Tomato Butter and Teresa's favourite Quick Fry Veggies
Whoa, that recipe title is a bit of a mouthful! Fortunately the name is probably the most complicated part of this dish which is very quick and easy to prepare (ready in under thirty minutes), not to mention low carb. So we are ticking a lot of good boxes here today folks!

Chocolate Energy Squares (gluten and refined sugar free)
There is a fantastic meme doing the rounds on social media at the moment, you might have seen it. Two women are having coffee together and one says "I feel like March flew by so fast" to which her friend replies "It's May". *insert comical shocked face here* Judging from many of the conversations I have had in the last week it seems as though a lot of us are feeling that way right now. And look out, because tomorrow it will be June! Other than wondering where the year has gone I have also been looking out for healthier recipes to make at home. We are very fortunate not to have any food allergies in our family but lately I have been inspired to try new ingredients and find healthier alternatives to use at home everyday. This recipe was the result of some playing around I did a few weeks ago.

Low Carb Chilli Beef and Vegetable Stir Fry
It is time for another "dinner in a flash" recipe - we love those right? And this one will also, I think, be met with nods of approval from the banting crowd. This beef and veggie stir fry is a very simple but delicious meal that works well for supper or lunch. (Or both if you have leftovers.) I say simple because I usually prepare my stir fries with a homemade sauce, or at the very least a splash of soy sauce but in this recipe I have simply used a couple of aromatics to give the dish its tasty flavour with the added bonus of making it sugar free.

Sugar Free Chocolate Granola
If you were a fly on the wall in our home early in the morning there are a number of different scenarios you might witness, depending on which day you were there. The fact is that when you have small children you never quite know how the morning is going to play out! Yesterday morning for example everyone was up and out of bed ten minutes earlier than normal, ate their breakfast quickly and got dressed promptly and cheerfully which meant we were ready to leave the house quite a bit earlier than usual. On another morning you might witness an altercation over a cereal bowl and/or breakfast cup, a world record attempt for the longest time taken to finish a piece of toast or some intense outfit negotiations... all resulting in delays, heavy sighs and a late departure for school. But one thing you will almost certainly see at some point in the morning rush is yours truly munching on a bowl of this fabulous stuff.

Chocolate Banana Bread (Paleo)
Every now and then I come across an absolute gem of a recipe online and this one is one of my current favourites so be warned, I am going to be getting gushy today. I have been telling everyone about this chocolate banana bread! It is the creation of Rachel from Bakerita.com and she has kindly allowed me to share it with y'all.

Sugar Free Chocolate Mousse
My regular readers will know that I love a fully loaded treat, but lately I have been on the look out for recipes that are both delicious but free from things like sugar and gluten. I notice such a difference in my energy levels when I avoid these (no more mid afternoon slumps), not to mention feeling more clear headed. So I was intrigued when my son's teacher told me about this amazing sugar free chocolate mousse - of course I had to try it!

Sugar Free Banana Cake
It is March and in my house that equals birthdays and lots of baking! I made this cake earlier in the month for my daughter's school birthday and wanted to avoid added sugar but still make something delicious that the children would love. This cake has a soft, light texture and a delicate banana flavour. Rather than cover the cake with icing I drizzled it with delicious melted carob. This is a great alternative to chocolate!

HOMEMADE TOMATO SAUCE
In the last few months I have been hearing more and more about sugar, particularly the negative effects it has on body and mind. I have become more conscious of my sugar intake, especially the hidden sugars that lurk in most convenience foods, and thinking of ways to reduce it. Wouldn't it be great, I thought, to develop some sugar-free versions of some of my family's favourite condiments, starting with that oh-so-delicious but oh-so-sugary tomato sauce. I started working on a recipe, but then life just got crazy busy and my poor little recipe slowly slipped down the to do list and was forgotten for a few weeks.

Date and Nut Balls
Warning: parental ramblings ahead! I am sure parents everywhere are breathing a collective sigh of relief as school resumes for the third term. If I am honest I actually quite enjoyed the 3 week break from lunchboxes, school runs and most of all the dreaded "lurgies" that always make their way home from the playground. Yes, the holidays can push any parent's patience to the limit at times, but all too often I am reminded of how quickly time goes and that this chapter in our family journey is really so fleeting and special. Even when I am knee deep in stuffed toys, picking tiny bits of muesli off the soles of my feet (did I not just sweep that floor 5 minutes ago?!?) and answering the same question for the tenth time whilst pureeing a chicken and veggie concoction for the babe. All to the soundtrack of the washing machine and Disney radio. Special times, chaos and all!

Angelfish with Steamed Asparagus and Lime Beurre Blanc
Bonjour! We're getting ever so slightly posh this week with a little help from our French friends. This is the kind of meal usually reserved for those occasions when I have an evening out and can enjoy my dinner at a restaurant, but it's surprisingly simple and perfect for when you want to prepare something extra special at home.
Beurre blanc if you didn't know is a creamy, butter sauce. It is extremely versatile and can be prepared in many ways - you could add herbs, stock or even red wine. The variations are almost endless, and this is my version.
Beurre blanc is the perfect accompaniment to seafood and green veg, and I paired it with what I had in the fridge at the time - angelfish and asparagus on this occasion You could enjoy it with tuna or salmon (my favourite) and other green veggies like green beans and broccoli. You could also serve it with crushed baby potatoes or mash if you like.
Although the components of this dish are fairly straightforward it's the timing that can be tricky. You'll want to have everything ready to be plated at the same time, especially the sauce which should be served immediately.
If you follow the instructions below you shouldn't have any problems making the beurre blanc, but please take note of a few things: you should make sure that your butter is cold as this will help prevent the sauce from splitting. Once it has been cubed return it to the fridge until you're ready to use it. If the sauce does split remove it from the heat immediately and beat a tablespoon of the sauce in a cold bowl. Gradually add the rest of the sauce beating continuously until it is creamy again. Be sure to taste the sauce before serving. The acid and the butter should be balanced with neither overpowering the overall flavour.

ANGELFISH WITH STEAMED ASPARAGUS
and LIME BEURRE BLANC
Serves 4
40ml white wine vinegar
40ml dry white wine
2 whole black peppercorns
1/2 teaspoon lime juice
2 whole black peppercorns
1/2 teaspoon lime juice
2 teaspoons sliced spring onion
400g asparagus
4 angelfish fish fillets
olive oil
salt
pepper
400g asparagus
4 angelfish fish fillets
olive oil
salt
pepper
120g butter, cubed
Step 1.) Place the white wine vinegar, white wine, peppercorns, lime juice and spring onions in a small saucepan over a medium heat. Allow the mixture to boil until it has reduced to approximately 10ml (2 teaspoons).
Step 2.) While the vinegar mixture is boiling wash and trim the asparagus and steam until bright green and tender. This will take 5-6 minutes.
Step 3.) Drizzle the fish fillets with olive oil, season with salt and pepper and grill or pan fry for a few minutes on each side until just cooked and flaky.
Step 4.) Finishing the sauce: once the liquid has reduced in step 1, take it off the heat and remove the spring onion pieces. Whisk in 2 cubes of chilled butter, and once melted return the saucepan to the stove on a very low heat. Gradually whisk the remaining butter into the sauce, one or two pieces at a time, only adding new pieces once the previous ones have almost melted. Be sure to whisk the sauce continuously and don't allow it to get too hot or the sauce will liquefy. Remove from the heat as soon as all the butter has been added. Season to taste with salt. Note: if the sauce is too tart for your liking you can always add more butter.
Step 5.) Season the steamed asparagus with some salt and plate along with the fish and beurre blanc. Serve immediately.
