It has been a while since I worked on a muffin recipe and I am rather pleased with this particular one. I was recently invited onto the Expresso Morning Show to present three different, easy recipes with one common ingredient. I chose dates as my star ingredient and wanted to include a baking recipe in one of the cooking segments. That was the inspiration behind these date muffins.

I have been making an effort to buy more organic vegetables lately. Besides being good for the family I like the idea of supporting smaller, local farmers... and their produce is fantastic! To make life easier I order a weekly veggie bag which I collect from a nearby organic shop every Wednesday and the kids love unpacking it to see what goodies we have for the week ahead.

Chocolate, Honey and Hazelnut Fridge Fudge

I was not quite sure what to call this recipe. It is not really like fudge in the traditional, crystalline sense but something in between fudge and chocolate. The reason for this is that I have sweetened it with honey instead of sugar, giving it a silky smooth, melt in your mouth texture - delicious!

There is a fantastic meme doing the rounds on social media at the moment, you might have seen it. Two women are having coffee together and one says "I feel like March flew by so fast" to which her friend replies "It's May". *insert comical shocked face here* Judging from many of the conversations I have had in the last week it seems as though a lot of us are feeling that way right now. And look out, because tomorrow it will be June! Other than wondering where the year has gone I have also been looking out for healthier recipes to make at home. We are very fortunate not to have any food allergies in our family but lately I have been inspired to try new ingredients and find healthier alternatives to use at home everyday. This recipe was the result of some playing around I did a few weeks ago.

How to make easy rainbow meringues (and a rainbow cake!)

Crisp, white meringues are one my favourite things to make, but a few weeks ago I tried something a little different by adding some colours to the mix! The reason? I wanted to top my daughter's rainbow birthday cake with rainbow meringues. I had so many party guests (well, the parents) asking me for the recipe that I have decided to pop it on the blog this week along with my go-to meringue recipe. I am also sharing a few tips for making your own rainbow cake.

If you were a fly on the wall in our home early in the morning there are a number of different scenarios you might witness, depending on which day you were there. The fact is that when you have small children you never quite know how the morning is going to play out! Yesterday morning for example everyone was up and out of bed ten minutes earlier than normal, ate their breakfast quickly and got dressed promptly and cheerfully which meant we were ready to leave the house quite a bit earlier than usual. On another morning you might witness an altercation over a cereal bowl and/or breakfast cup, a world record attempt for the longest time taken to finish a piece of toast or some intense outfit negotiations... all resulting in delays, heavy sighs and a late departure for school. But one thing you will almost certainly see at some point in the morning rush is yours truly munching on a bowl of this fabulous stuff.

I could not resist this recipe when I came across it - the title alone has me dreaming of soft cake drenched in sticky citrus deliciousness. It is adapted from a recipe by Yotam Ottolenghi and Sami Tamimi from their book Jerusalem. I also happen to have an excess of marmalade in my fridge and adore anything with coconut in it so this one had my name written all over it!

Almond Tart

Making these cookies is rather like going back in time for me! This is one of my mother's recipes that my family have enjoyed for as long as I can remember. (Even now, if you were to have a peek in her biscuit tin there is a good chance you would find some of these inside.) There was often a block of almond tart tucked in my lunchbox or gobbled up as an afternoon treat after school.

October was a rather hectic but very exciting month here at Cupcakes and Couscous HQ. Chaos continued to reign on the home front as renovations went on (we are starting to see the light at the end of the tunnel, hooray!), my sister visited us from the U.K (double hooray!) and we had a couple of special family birthdays - my Dad, and my youngest James who turned two. He is completely obsessed with all things train related and so it was a no brainer as to what his party theme would be. I thought that this week I would share a few snaps from the day, perhaps they will give you a few ideas if you have a train party coming up.

Chocolate Fudge Nut Pieces

Such naughtiness on the blog today! I was in two minds about sharing this recipe which was inspired by a treat by Tessa Kiros from her book (and one of my favourites on the cookbook shelf) Apples for Jam. You see, when I tried the recipe it did not come out quite the way I had expected. For one thing the picture in her book shows a toffee square that is much darker and (from what I can see) firmer than what I ended up with. I have made this recipe a few times and I tend to end up with more of a fudgy, crystalline mixture. Still, no complaints about that and the family gave these chocolate fudge nut pieces a thumbs up for blog-worthiness, so who am I to argue.

So how were the holidays everyone? Did you have fun? Did the Easter bunny come to visit? The last two weeks have gone quickly - holiday outings and play dates, the build up to Easter and of course lots of egg hunting fun and family time over the long Easter weekend made for a busy time. Then last week we went on a family holiday with friends where we headed to Montagu for a few days. (Can you believe that in all my thirty five years this was the first time I had ever visited Montagu Springs?) We love a good road trip, although sadly the littlest of our troupe decided that he was not enjoying the long drive and expressed his disapproval in a rather loud and shouty manner for much of the way! Other than that little hiccup the trip was loads of fun and turned out to be a perfect spot to take the family. All in all it was a very special holiday and I can't help feeling a bit sad that it is over. For now, it is back to school runs, packed lunches and the regular term time routine - onward and forward!

Greetings and Happy New Year everyone! I have had a lovely break, albeit a busy one packed with get togethers with family and friends, bits of admin that we did not get to during the year and plenty of feasting. We even managed to end off with a few days away in beautiful Franschhoek - just my little family, which was a perfect way to end off a busy holiday. It almost made up for the administrative portion of the holiday - because nothing screams "holiday fun" more than having to queue for five hours to renew your car licence and another eight hours for passports! Hey ho.

Warning: parental ramblings ahead! I am sure parents everywhere are breathing a collective sigh of relief as school resumes for the third term. If I am honest I actually quite enjoyed the 3 week break from lunchboxes, school runs and most of all the dreaded "lurgies" that always make their way home from the playground. Yes, the holidays can push any parent's patience to the limit at times, but all too often I am reminded of how quickly time goes and that this chapter in our family journey is really so fleeting and special. Even when I am knee deep in stuffed toys, picking tiny bits of muesli off the soles of my feet (did I not just sweep that floor 5 minutes ago?!?) and answering the same question for the tenth time whilst pureeing a chicken and veggie concoction for the babe. All to the soundtrack of the washing machine and Disney radio. Special times, chaos and all!

Strawberry & Peach Yoghurt Pops




It has been a hot, hawt summer down here in the Cape. Stick-to-your-seat, get-that-fan-on-now kind of hot. If you were a fly on the wall in our home you would witness a similar scene most afternoons. In an attempt to cool down, our three year old (having gradually discarded each item of her clothing as the afternoon has gone on) is usually running around with nothing on by supper time, and small items of clothing and empty princess water bottles are strewn all over the house. Maybe you have a toddler at home too and can relate - please say you do! It must seem a crazy sight.

Having endured some frightfully cold European winters and not so summery summers I do not want to complain too much about the heat, but I would be lying if I said I wasn't looking forward to autumn just a tiny bit. Yet, in the spirit of summer here is a new recipe for you to enjoy.
